Serve 1~2
<Ingredients>
1 cup | shredded green papaya |
1/4 cup | shredded carrots |
1 | long bean or green bean cut 1 inch width |
3 | cherry tomatoes or regular tomatoes (cut big chunk) |
1 tablespoon | dried shrimps |
3 tablespoons | roasted peanuts |
2 | bird's eye chilies |
4~5 cloves | garlic |
2 tablespoons | palm sugar or brawn sugar |
2 tablespoons | fish sauce |
1 1/4 tablespoon | lime juice or lemon juice |
1 tablespoon | tamarind paste |
<Method>
1. pound garlic, dried shrimps, chilies and peanuts in the clay mortar and use the wooden pestle pound together. (tenderly)
2. Add long bean and cherry tomatoes, pound a few times just to bruise the bean and get the juice out of tomatoes.
3. Season with lime juice, palm sugar, fish sauce and tamarind paste.
4. Add papaya and carrots use the wooden pestle to push the mixture up in the mortar and spatula to push it down so that the mixture is mixed well.
5. Serve with fresh vegetables and sticky rice.
